A delicious pechy keen peach cake
Ingredients: Crust 1-1/2 c flour or (whole wheat pastry flour op) 1/2 tsp salt 1/2 c soft butter
Batter 1 lg can sliced peaches (in fruit juice op) 1/2 c sugar or sucanat 1/2 tsp cinnamon 1 egg 1 c evaporated milk
Directions: Crust: In bowl add flour and salt and cut butter into it. Press flour mixture in a 9 inch square pan.
Batter: Drain peaches and save 1/2 c liquid. Place peaches on top of crust and sprinkle with mixtue of cinnamon and sucanat or sugar. Bake 375 degrees 20 minutes.
In bowl mix: Peach liquid, egg and milk. Pour mixture over peaches after peaches baked 20 minutes and bake an additional 30 minutes or until done.
