Peach Preserves

Ingredients:
15 lbs peaches
1 c vinegar
5 lbs sugar or (sucant opt)

Directions:
Wash and drain peaches. Do not peel peaches. Slice and place in large container. Pour sucanat or sugar over peaches and stir. Let sit overnight.

The following day:
In pan add vinegar and peaches and cook until thick. Mixture looks like jelly. Pour mixture into jars and seal while hot. Serve as jelly.
